BISON

We are excited to offer our customers bison from Red Frazier based in Bloomington, IN.  These bison are raised locally in the hills of Green County.  Click here for information on nutrition, cooking, and recipes.

Bison is higher in iron and protein than beef and lower in fat and cholesterol than both skinless chicken and salmon. No added fat, and never any hormones, steroids, or antibiotics. Ground bison is a great substitute in chili, pasta dishes, meatloaf, tacos, and of course it makes a great burger. Due to bison being very lean, we caution against overcooking it to avoid drying it out.

STRIP STEAK

Strip Steaks are a tender and flavor rich cut of bison. Typically thicker than other steaks, they are the perfect cut for high temperature grilling. Like all bison meat, Strip Steaks are a lean red meat and should be cooked to an internal temperature of no more than 145 degrees (medium). TOP SIRLOIN STEAK

Usually the least tender of the steak cuts, the key to a perfect sirloin is not to overcook it. FLANK STEAK

SKIRT STEAK

Skirt steak is the traditional cut used in fajitas. It is also great in a stir-fry. Typically marinated and incorporated into a dish, it is the perfect way to put a new spin on a favorite recipe. Like other bison steak cuts, it is cautioned against overcooking to avoid drying it out. Skirt steak should be cooked to an internal temperature of no more than 145 degrees. SHORT RIBS

Short Ribs come from the Chuck and Plate section of the animal and consist of well used muscles. This makes them somewhat tougher, but also full of flavor. Short Ribs have the marbling of a rib steak combined with the rich flavor of a Chuck Roast. They do well braised or slow cooked. "Low and slow" is the best approach when cooking Short Ribs. Each package contains 3-4 bones, is frozen, and vacuum sealed.

CHUCK ROAST

Chuck Roast comes from the shoulder of the bison and typically has a decent amount of fat content. They tend to fall apart once prepared and are a perfect fit for a pulled bison recipe. It can be prepared by broasting, baking, slow-cooking, or pressure cooking. Bison meat is very lean, and can be over-cooked if adjustments are not made. "Low and slow" is a great approach when cooking a bison Chuck Roast. Each package is frozen and vacuum sealed.

HEARTS

Heart muscle is tough, but nutrient dense. To avoid it being chewy, it should either be diced and cooked for a short period of time on high heat, leaving it medium rare. Or, it can be braised in low heat for an extended period of time until it shreds. Each package is frozen and vacuum sealed.
