We are excited to offer our customers bison from Red Frazier based in Bloomington, IN.  These bison are raised locally in the hills of Green County.  Click here for information on nutrition, cooking, and recipes.

Short Ribs come from the Chuck and Plate section of the animal and consist of well used muscles. This makes them somewhat tougher, but also full of flavor. Chuck Roast comes from the shoulder of the bison and typically has a decent amount of fat content. They tend to fall apart once prepared and are a perfect fit for a pulled bison recipe. It can be prepared by broasting, baking, slow-cooking, or pressure cooking. Bison meat is very lean, and can be over-cooked if adjustments are not made. "Low and slow" is a great approach when cooking a bison Chuck Roast. Each package is frozen and vacuum sealed.
